Sun, Fun, Friends and HUBBY TIME!


The first day back at work after a long weekend is always so difficult! At least you get to share your fun stories with friends and coworkers, clinging to the memories of the weekend. Sadly, all good things must come to an end :(

This Memorial Day weekend was especially awesome, since it was a 3.5 day weekend. For me, it was filled with a few hours by the pool, a few hours reading books, a few hours at the gym and tons of hubby time – in a nutshell, it was FANTASTIC.

It’s rare that Chad and I have a full day together – one or both of us is usually working. Luckily, he had Memorial Day off, so we spent the entire day together. Breakfast, working out, a little shopping and then having our friends over for some pool time, grilling and games – it really was the perfect day! Wish we could have more like it, but it really makes you appreciate the few you get :)

I texted him on the way to work this morning, saying I missed him already and really wish we could do it more often! This weekend spoiled me :)


My First Self-Made Dinner Creation!


You guys are always so sweet to comment on my random Facebook food photos. It’s true – I cook almost every day, and really enjoy it. However, all of my dishes come from recipes – I’ve never created something in my brain and then had it come to life. Until now!

Last night, I decided to make garlic butter shrimp with herbed orzo and oven roasted asparagus. No, it’s not the most difficult thing ever – in fact, it was probably one of the easiest things ever – but you have to start somewhere! And since Allison asked for the recipe (and because I love her), here it is :)

1 lb shrimp, thawed

2 T butter

You can call me Chef Garneau

3 large cloves garlic

(sautee these for 6-8 minutes, or until cooked thoroughly)

orzo, prepared according to package directions

2 handfuls mozzarella cheese (specific, I know)

salt, pepper, basil and oregano, to taste

1T olive oil

(cook orzo, add all other ingredients and stir – ROCKET SCIENCE I tell you!)

asparagus (however much you want)

2T olive oil

salt and pepper to taste

(drizzle asparagus with olive oil and add salt and pepper. cook on 375 for 15 minutes.)
